The latest addition to the Sullivan Street Tea & Spice Company spice set collection is a rich-hued, aromatic Mediterranean affair, that combines familiar Italian flavors with rare, hard to find regional spices that chefs depend upon to maintain the “secret” in their sauce.

         Here is what's in the box:

  • Bruschetta Seasoning: An aromatic blend of bruschetta spices, ideal for adding depth to your favorite pasta or tomato sauce. In an antipasto, bruschetta seasoning adds the classic taste to any topping, tomatoes, pork or mozzarella.
    Ingredients: organic garlic, organic oregano, organic basil, Calabrian hot chili flakes, organic parsley, sea salt
Wild Porcini Salt
  • Wild Porcini Salt: Sprinkle delicately on your favorite dishes at the end of the cooking cycle for the bold umami kick of a savory porcini mushroom. The porcini fungus is excellent in soup, pasta and risotto. Keep in mind that you are both flavoring and salting your dish with the Wild Porcini Salt, so use accordingly.
    Ingredients: sea salt and dried ground wild porcini mushrooms

Calabrian Pepper Flakes
  • Calabrian Pepper Flakes: Grown in the Calabrian region of Italy and known as peperoncino, this pepper is fruitier and spicier than your typical red chili. An excellent way to add heat to meat, pasta, pizza, and antipasto. Remember, the peperoncino is hotter than typical chili flakes, so use according to your heat tolerance (25,000-40,000 Scoville Heat Scale).

      Finally, the “secret spice” in fine Italian cooking.

  • Fennel Pollen: Collected from wild fennel flowers, a tiny sprinkle will take your Italian cooking to new heights with a wonderfully floral and sweet accent. This is the “secret” spice of many top Italian chefs, as the aroma of the fennel pollen is impossible to duplicate. Lightly coat pork or chicken prior to roasting or dust across pasta as a finishing touch. Collecting pollen from fennel flowers is a very labor intensive and difficult process thus making this spice one of the most expensive in the world.

Spices are conveniently packaged in easy to disperse glass vials and housed in a recycled pulp paper box.  Each vial contains approximately 1.25 oz. of spices. Alla vita!
